For mid-semester break, we went to Phuket, one of the largest islands and most popular beaches in Thailand, with coasts of soft, white sand and rainforested mountains in the interior. Activities abound from water sports, such as diving, snorkeling, and jet skiing, to shopping at local markets and malls, to relaxing with a beach-side Thai massage and snacking on sweet mango, juicy Phuket dwarf pineapple, and grilled corn or squid from one of the vendor stalls.

Within an hour, you can get across the island.
Cut-up mango, watermelon, jack fruit, and pineapple make for sweet, refreshing street food.

Banana Pancakes, Thai versions of crepes, thicker and tropical with condensed milk syrup, mangoes, honey, and bananas. Phuket’s minority Muslim population, especially the women, were the expert pancake makers.
